Zucchini Stew

4-6 small zucchini, cut into thin slices

1 can organic crushed tomatoes – seasoned

1 large can organic tomato sauce – seasoned

1 can organic white beans

4 cloves garlic crushed

1 small onion diced

2 bay leaves

2 Tbsp Olive oil

2 cups Organic chicken stock or bone broth

Sea Salt

Black pepper

Italian seasoning


Add 1-2 Tbsp. olive oil to the bottom of a large saucepan. Sautee onions until translucent. Add crushed garlic and saute another couple of minutes being careful not to burn. Add crushed tomatoes, tomato sauce, and chicken stock or bone broth. Add zucchini and white beans. Bring to a simmer and cook until zucchini is soft. Season to taste with salt, pepper, and seasoning of your choice. Serve hot.
