3 c. thinly slice zucchini ( approx 1 ½ LG. zucchini)
2 tsp. Chopped parsley
½ tsp. Black pepper
⅛ tsp. Salt
½ c. chopped onions
½ c. grated parmesan or romano cheese
1 tsp. Oregano
3 eggs
½ c. oil
1 c. Bisquick or a similar type
(alternative for above:)
1 c. GF all-purpose flour
1 ½ tsp. Baking powder
½ tsp salt
1 Tbsp. melted unsalted butter
Topping (optional)
Sliced tomato
Shredded cheddar cheese, or your choice.
Mix together, add zucchini last. Pour into a greased 8” square pan. Placed sliced tomato and shredded cheese on top. Bake 350 @ for 30-35 minutes until firm.
Use 9x13 pan if the recipe is doubled.
Spinach can be substituted for zucchini.
