Ingredients:
4 Tbsp grass-fed butter
2 cloves garlic, minced
1 Tbsp tomato paste
1 pound baby portobello mushrooms, cleaned
1 cup cherry tomatoes, halved
¾ cup organic heavy cream
¼ cup grated Parmesan cheese
Himalayan sea salt
Ground black pepper
Crushed red pepper flakes
3 cup spinach
Basil, thinly sliced
Instructions:
Melt butter in a large skillet over medium heat. Add garlic and tomato paste and cook until fragrant, approximately 1-minute, taking care not to burn the garlic. Add mushrooms and tomatoes and cook until tender, approximately 5 minutes. Add heavy cream and parmesan cheese. Season to taste preference with salt and pepper. Add a pinch of red pepper flakes. Bring to a simmer. Add spinach and continue to simmer until sauce is reduced and spinach is wilted, approximately 5 minutes.
Garnish with basil and serve!
