Spicy Citrus Mussels
**Health notes: mussels and oysters are known aphrodisiacs. The pine nuts add zinc to improve fertility. Spice from cayenne increases endorphins and promotes euphoria and vitamin C from oranges improves circulation!**
Ingredients:
2 strips uncured bacon, chopped
2 garlic cloves, thinly sliced
¼ white onion, diced
2 ripe plum tomatoes, diced
2 sprigs fresh thyme
6 ounces dry white wine
1 lb mussels, scrubbed and debearded
⅓ cup pine nuts, toasted
⅛ tsp cayenne pepper
1 orange, juiced
Instructions:
Add pine nuts to a small frying pan and cook over low-medium heat until slightly toasted, taking caution not to overheat or burn.
In a dutch oven or skillet, cook bacon until crispy, approximately 3-5 minutes on each side. Add the garlic and onions and cook until translucent, about 1 minute. Add the cayenne pepper, tomatoes, thyme, wine, orange juice, and mussels. Cook covered until the muscles open, 5-7 minutes. Top with pine nuts and serve immediately.
Optional:
Use gluten-free bread to soak up the sauce.
