Preheat oven to 400 degrees
Chop veggies of your choice
Some of our favorites: brussel sprouts, squash, broccoli, beets, sweet potatoes, garlic, onions, tomatoes, cabbage, red and yellow peppers
Toss with olive oil, sea salt, pepper & garlic powder
Add herbs of your choice
Spread evenly on baking sheet
Roast 20-30 minutes or longer
Flip halfway through
Add Kielbasa or chicken sausage to this meal. Slice and spread on baking sheet along with vegetables.
Goat cheese is a tasty addition to any tray of roasted veggies. You can spread on when there are 5-10 minutes left to allow to melt or add to your own plate.
