1 lb sushi-grade ahi tuna, cut into bite-sized cubes

Create the marinade, add the tuna and refrigerate for at least 1 hour. Mix the dressing together in a small bowl, cover and refrigerate. Cook your quinoa or cauliflower rice according to instructions on the package. Chop vegetables and clean the lettuce.
