Not Your Average Meatloaf

Ingredients:


1 lb organic ground beef

½ pound organic ground pork

10 slices uncured bacon, chopped

1 Tbsp coconut oil

1 small onion, chopped

2 organic carrots, chopped

1 celery stalk, chopped

2 eggs

1 cup seasoned gluten-free bread crumbs

2 Tbsp Worcestershire sauce

2 Tbsp apple cider vinegar

1 Tbsp Himalayan sea salt

1 ½ tsp ground black pepper

1 tsp allspice

¼ cup fresh parsley, chopped



Instructions:


Preheat oven to 350. Add coconut oil to a large sautee pan and heat over medium heat. Add carrots, celery, and onions and cook until onions are translucent and vegetables are tender. Remove from heat and allow to cool. In a large bowl, combine beef, pork, and bacon. Add egg and bread crumbs to the meat mixture. Once the vegetables are cooled, season with Worcestershire, apple cider vinegar, salt, pepper, and allspice. Combine vegetable mixture, meat mixture, and parsley. Form into a loaf shape and place in loaf pan or small casserole dish. Bake uncovered for 60-90 minutes or until the center is cooked through. If the top starts to get too brown, cover with aluminum foil until cooked completely.



Pro Tip:

Meatloaf is best rewarmed by slicing and warming in a frying pan over melted grass-fed butter! Try serving with mashed cauliflower rather than potatoes to keep the carb count down.
