Same satisfying side with a bonus of less carbs and more protein!
Head of Cauliflower (cut florets off)
1 clove of garlic
¼ cup parmesan cheese
1/8 cup half and half (or desired amount)
Salt and Pepper to taste
1. Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until tender, about 10 minutes.
2. Meanwhile, Roast garlic in oven or sauté in a pan with olive oil.
3. Transfer half the cauliflower to a food processor; cover and blend on high. Add remaining cauliflower florets. Blend in garlic, Parmesan cheese, half and half, salt, and black pepper.
